I have lived in the rural south for over 25 yrs. Raised up in Boston (boring food-nada on spices), 30 yrs US Navy (good healthy chow, but boring),then I found Cajun!! Then I knew God loves all of us. Now we live in upstate ny. Lake effect country. So, to remember the south, I cook anything & everything Cajun. Winters seem to be a little warmer. Thanks, for the article. It was intresting. Thinking of spring, Mike
