Two Tbls oil
225 grams (3 cup) mushrooms
half a cup walnuts – finely chopped then toasted lightly
Two T. sherry or fortified wine
One tbsp lemon juice
1 tsp grated orange/lemon peel
2 Tablespoons parsley (finely chopped)
Salt
Add all the other ingredient except the parsley. Heat the mix for about a minute, mixing well to guarantee the mushrooms are well coated with the tasty mix.
