How to Cook Chicken Cooked in Cyder

Chicken is justifiably one of the best loved meats in the world.
It is virtually fat free, high in protein, extremely versatile and is the key ingredient in a lot of diet recipes. If you can get hold of an free range chicken, all the better, as it will be free from any hormones or other unhealthy additions. It Is also a good policy from the animal welfare point of view, as most of the grocery store chickens are forced to live in conditions that are quite immoral.

If you are not worried about weight loss, relax, there is more to chicken than diet recipes. However, most chicken recipes will be, more often than not, healthier than similar recipes made with different meats, like beef or pork.

Here is an easy to cook recipe that’ll impress both family and friends.

To prepare this recipe, you will need:

One chicken (approx. 3.5 lb)
2 cupful of cider
6 Fresh Apples (peeled and cut into quarters)
salt (as required)
pepper (as needed)
One teaspoonful cornstarch
1/2 cupful whipping cream (light)
1 Tbs of fresh lemon juice
1/3 cupful of butter
2 Tbs of oil (olive)
A quarter teaspoonful cinnamon (optional)
Four green onions, (chopped fine)
Two whole cloves
A quarter tsp. ginger
1 sprig of parsley, (chopped well, for decoration)
1/2 teaspoonful thyme
2 teaspoons of sugar

Preparation:

Clean the Chicken and dry it well.
Combine some salt and pepper amd smooth it into the organic chicken (both inside and out)
Drizzle the lemon juice over the pieces of apple.

Take a large frying pan or skillet and melt half the butter and mix in the olive oil.
Add half of the apples to the pan and fry lightly for 5 min. (until they have browned a little)
Mix in the ground ginger and give it a few stirs, frying a short while longer to enable the ground ginger to develop it’s flavours.
Stuff the apple mixture into the chicken and close-up the chicken by tying or by use of a skewer.

Melt the remaining butter into the pan and then put the organic chicken into the frying pan and gently brown it, browning it all over.
Place the bird in a large casserole pot with lid.
Take the apple that is left, the spring onions, cinnamon, dried thyme, sugar and cloves and transfer them to the pan.

Fry gently for a couple of minutes then add the cyder and increase the heat to start the mixture boiling.

When the cider mixture is at boiling point, pour it over the chicken in the casserole dish and cover the pot with foil or waxed paper before placing the lid on the pot.

Put the pot in the oven and cook for approx 3/4 hour at 200C/400F

When the time is up, remove the chicken from the pot and put onto a warm plate to keep warm whilst the gracy/sauce is prepared.

If there is any fat in the pot, skim it off and then increase the heat, boiling the liquid away until there is only one cup full remaining.

Pour in the whipping cream and cornstarch, and stir constantly till it reaches a nice creamy consistancy.
Add salt and pepper to taste, and pour the sauce over the organic chicken

Serve with the chopped parsley sprinkled over the chicken.

If you are entertaining guests, you may want to add a vegetable side dish of steamed broccoli or green beans and new potatoes.
