<p>The cuisine of the Middle East, which is actually many variations on a similar theme, includes such a variety of <a target="_blank" title="Dukkah and other exotic spice blends" href="http://culinarynook.com.au/products/herb-a-spice-blends">aromatic spices</a> like cardamom, cinnamon, cloves, mint, allspice and sumac. And they can be used in as many ways as there are spices themselves.</p>

<p>Cardamom is often used to scent things like soups and rice dishes, and as a spice in tea to add a slightly spicy exotic flair. It is also commonly added to beverages, and is the principle defining flavour in Turkish coffee.</p>

<p>Garlic, though not botanically a spice, is often a primary flavouring in many Middle Eastern dishes, playing a major role in the taste profile of everything from appetizers to main courses.</p>

<p>Although it is considered by many to be the most costly spice, per ounce, in the world, saffron is also very commonly used in this cuisine. Not only does it impact a sunny yellow colour, it also gives the dish a lovely delicate fragrance and flavour.</p>

<p><em>Butnege</em></p>
<p> </p>
<p>Another spice that is quite commonly known in the Middle East but that is virtually unknown in other regions of the world is butnege. Known as Iraqi mint, this spice is used to flavour things like vegetables dishes such as salad or stuffed chard leaves. If a substitution is necessary, basil or oregano offers a similar herbal element, although the dish will lose some of its exoticism.</p>

<p>To add a pleasing tangy element to your dish, consider adding sumac. This red-brown spice is both tangy and aromatic, and is readily available in many parts of the world.</p>

<p><em>Cumin</em></p>

<p>For an appetizing earthy-smoky flavour, add some cumin to your food. Beware, however, that it can be very overpowering and that a little bit goes a very long way toward adding that special base note to a dish.</p>

<p><em>Nutmeg</em></p>

<p>In many parts of the Western world, one thinks of nutmeg of solely something that should ought to be relegated to the job of flavouring cookies and cakes. In the Middle East, however, it is also adds a subtle warmth to many savoury dishes, include meat-based stews, etc.</p>

<p><em>Turmeric</em></p>
<p> </p>
<p>Used virtually exclusively in its ground form, turmeric is used to flavour things like meat and vegetable dishes. It is also prized for its vibrant colour, which is evidenced by the earthy yellow colour it often imparts to spice blends like curry power. Its flavour is somewhat bitter, but not offensively so.</p>

<p><em>Baharat</em></p>
<p> </p>
<p>The Arabic word &#8220;baharat&#8221; means &#8220;mixed spice,&#8221; and it can refer to a variety of spice combinations that vary by region or family, much like curry powder. A commonly available pre-mixed blend is called &#8220;sebath baharat&#8221; which, directly translated, means &#8220;seven spices.&#8221;</p>

<p><em>Allspice</em></p>

<p>Often construed to be a collection of spices ground together, allspice is actually a berry that merely tastes as though it as the flavours of things like cinnamon, nutmeg and cloves. Although used in Western countries mainly in dessert preparations, it&#8217;s used in the Middle East much like nutmeg is, to flavour meats, stews and other savoury dishes.</p>

<p>Cinnamon is also used in savour preparations, and offers both an earthy flavour and an aromatic fragrance to those dishes.</p>

<p>Here&#8217;s a new way to look at an old (for many people) classic: Adding thyme to things like meat dishes can add a Middle Eastern taste, particularly when combined with sesame seeds, a combination typically referred to as za&#8217;atar in spice markets. When mixed with some good-quality olive oil, za&#8217;atar makes an excellent dip or spread for pita bread.</p>

<p>Utilizing different spices and combination of spices can be an inexpensive an exciting way to experiment with Middle Eastern cuisine. <p>Since ginger is really odd shaped it can be tricky to peel. I have seen people use a potato peeler and peel away half the ginger while they are at it.</p>

Just hit the stone with the knife to bury the blade into it and twist. The stone will lift right out. Then just twist the blade and the stone should come right out.</p>

<p>CITRUS POPPY SEED SALAD DRESSING</p>
<p>1/2 cup mayonnaise<br /> 1 tablespoon sugar<br /> 3 to 4 tablespoons half &amp; half<br /> 1 teaspoon poppy seed<br /> 1 teaspoon grated lime<br />  <br /> 1.Whisk together all dressing ingredients in small bowl. Cover; refrigerate 1 hour.</p>
<p>RANCH SALAD DRESSING</p>
<p>1/2 cup dry buttermilk powder<br /> 1 tablespoon dried parsley, crushed<br /> 1 teaspoon dried dill weed<br /> 1 teaspoon onion powder<br /> 1 teaspoon dried minced onion<br /> 1 teaspoon salt<br /> 1/2 teaspoon garlic powder<br /> 1/4 teaspoon ground pepper</p>
<p>1.Combine all ingredients in the blender and process on high speed until well blended and powdery smooth.</p>
<p>To use: Combine 1 tablespoon dry mix with 1 cup milk and 1 cup mayonnaise. Mix well.</p>

<p>In the summer I try to avoid using the oven because it is just too hot. Once fall arrives and the weather cools down it is time to use the crockpot.</p>
<p>This is just a basic recipe but it is easy enough to modify to suit your own taste. Once you have this basic version mastered you can change it up as you need to.</p>
<p>The first thing is to heat up the crock pot with some hot tap water. Fill the pot with hot tap water and start to heat it up. I don&#8217;t like to heat up the crock pot without liquid in it. I don&#8217;t want to crack it.</p>
<p>Add some oil to a large stock pot and and let heat before adding meat. Seer the meat will lock in the flavor. Keep turning the cubes so all the sides get browned. Keep an eye on the heat , you don&#8217;t want to burn the beef to the pan. I generally use about 6 on my stove. The meat should cook about half way then remove it from the pot.</p>
<p>Before adding the carrots and other veggies add a bit more oil to prevent the veggies from sticking. Get everything moving around so everything gets covered in the oil. You also want to scrape off the bits left on the pan from seering the meat. <a target="_blank" title="Cooking Tips" href="http://kitchen-helper.com">Cooking Tip</a>: There is a ton of flavor left in the &#8220;pan drippings&#8221;.</p>
<p>Allow these veggies to start to cook down. You don&#8217;t want the saucepan to get too hot or to have the veggies start to dry out and stick. You can add a half a cup of soup stock to cool things down. Add the meat once the veggies have heated and started to cook through. Add about a half teaspoon of salt now also.</p>
<p>Time to add a liquid to this~Now you can add some liquid}. It is ideal to use beef or vegatable stock for this but hot water will work also. Add enough liquid to cover all the veggies and bring to a boil. Cover with a lid and reduce heat. It can simmer away for about 20 minutes.</p>
<p>By this time the crock pot is ready. Pour out the water and add the soup, be real careful. I have been splashed and it hurts so I have started to use a laddle until almost all of it is in the crock pot.</p>
<p>I <a target="_blank" title="Beef Stew" href="http://kitchen-helper.com">let the stew cook for an hour</a> or so on high and then I taste it and start to season. It will need some salt, pepper and garlic powder. I also add some beef bouilon cubes and some onion soup mix as well. At this point you can also add some frozen corn and green beens or whatever else you want.</p>
<p>Let cook in the crock pot for about 5 hours on low and 2.5 or on high. Just before you serve it will need to be thickened. I use about 3 table spoons of flour mixed in 3/4 of a cup of milk. Pour in and stir. Cook until thickened, about 20 minutes.</p>
<p>Let leftovers cool and put into the fridge or freezer and enjoy when ever you fell the need for some comfort food. More <a target="_blank" title="Cooking Tips" href="http://kitchen-helper.com">Great Cooking Tips</a></p>
